| NOTES |
As in the old Monferrato
dialect the name “FANDAMAT” was reserved to the unruly children,
so it happens with Pinot Nero, wine with not easy vinification. |
| Grapes |
Pinot Nero |
| Soils |
Clayey-calcareous soils of
Bricco Santa Maria, where the grapes find the conditions
to express all their own Pinot Nero quality potential. |
| Vinification |
Treading-destemming, maceration on skins for
about 12 days at lower temperature than other grapes to keep all
the delicate fragrances. |
| Refining |
15 months in old oak barriques; the wine
after completes its refinement with a suitable period in bottle. |
